Story
The farm, El Paraiso, is located 8 km north of Pitalito, Huila and has been part of the Cuellar family for almost 4 generations. Jose Cuellar (picture), 42 years old, decided in 2017 to change the mindset from traditional grower to experiment with new varieties and post-harvest protocols. This change to specialty coffee have been a positive experience as he has been able to expand his production. Moreover, with a better revenue Jose bought two new farms.  

The focus of the farm is to provide coffee with the best quality and from different varieties.

Fermentation process: The coffee is de-pulped and goes to a cold fermentation spanning for 120 hours.  Then it goes for sun drying in parabolic driers.  

In this coffee you will find sweet notes of sugar cane, honey and mango.
