La Palma y El Tucán has not only become one of Colombia’s most exciting coffee producers but most admit that possibly also the worlds most innovative producer. Through years of hard work and experiments quality has formed into perfection, with the highest standards of processing involving a mix of science, research and history comes one of the most exiting flavour profiles on the market from also one of the newest exotic varietals on the market: SIDRA coupled with the innovative LACTIC process.
This coffee is a nano-lot from their ‘Estate & Varietals’ program though due to the rare cup score this is a HEROES SERIES.

THE LACTIC FERMENTATION: This form of fermentation is classified as ‘Anaerobic’ as oxygen has minimal interac- tion with the cherry and there is no agita- tion.
The coffee cherry is placed in sealed tanks after they are hand sorted upon arriving at the wet mill.
The removal of oxygen during this stage encourages a higher concentration of Lactic acid as a result of the mucilage carbohydrate fermentation, which in turn contributes to the organoleptic profile of the resulting cup.
We measure the main variables initially and then several times throughout the processing because they will be altered by the existing microorganisms.
the intended profile is an intense, very sweet, chocolatey and buttery coffee with winey acidity and a velvety body that results from the higher lactic acid content present in the cup.
